cinnamon raisin bread

raisin bread recipe

for the bread machine – a 2 lb loaf that smuggles wholewheat and barley under the cover of raisiny goodness.

Add the following ingredients, in order:

1 1/2 cups warm water
3 Tb butter, room temperature
3 tsp honey
1 1/2 teaspoons sea salt (fine)
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat bread flour
1 cup barley flour
5 tsp vital wheat gluten
1/4 cup 2% milk
2 tsp yeast – bread machine

Select “Whole Wheat” from Menu, “2 lb” for loaf and “Medium” for crust. When Mix signal sounds, add the following:

2 cups thompson raisins
1/2 cup brown sugar
2 Tb cinnamon

Remove paddle at signal. Remove bread from machine when baked and cool on rack before slicing. Yummy!
