fish sticks
Mix 1/2 cup all-purpose flour with some salt and pepper in bowl #1.
Beat two eggs in bowl #2
In bowl #3, mix together:
1 cup panko (or breadcrumbs if you prefer)
1/2 cup grated parmesan
sea salt
pepper
Cut up 1 lb of halibut into sticks. Drop them one at a time in bowl #1, #2, and then #3, coating both sides.
Fry em up in a couple tablespoons of butter and olive oil for about 2 minutes on each side, until golden. Serve with homemade tartar sauce or ketchup.
